The stem snapped clean, and I stuck it in a glass of water to see what it would do. It sulked for a week and then gave up, which taught me the one thing that matters most about dill: it resents being moved.

Everything else about growing dill in a pot is easy once you plan around that. It is fast, forgiving, and handsome, and a single container will cover pickles, potato salad, and fish for a whole season. Here is how I do it on a 6×10 balcony.

What you'll need

Fabric grow bags — choose a tall one, at least 12 inches deep, so the taproot has room; they drain well, which dill likes

Organic potting mix — light and well-draining, so the roots don’t sit wet

A long-spout watering can — for watering right at the soil, since wet foliage in cool weather invites trouble

A soil moisture meter — for checking down deep before you water, because the top inch of a bag dries fast

You’ll also want a packet of dill seed (I like a compact variety like ‘Fernleaf’ for pots) and a pair of small scissors.

Why start from seed

Dill grows a long taproot, the way carrots do, and it does not like to be disturbed. A nursery start that has circled in a small cell often stalls or bolts early after transplanting. Seeds sown right in the final container skip the problem. Seed is also cheap, and one packet will give you several sowings.

When to sow

Dill likes cool weather. In my Portland-area spot I sow in mid to late March, a few weeks before the last frost, and the seedlings take light cold without complaint. A hard freeze will finish them, so if a frost is forecast, I drag the bag inside for a night. In colder climates, wait until the soil can be worked and the worst of the freezes are over. Once summer heat arrives, dill speeds toward flowering, so sow again every three weeks through spring for a steady supply.

Planting step by step

1. Fill the bag to within an inch of the top with potting mix. Dampen it first so it’s evenly moist, not soggy.
2. Scatter the seed thinly across the surface, about an inch or so apart if you can. Dill seed is flat and light.
3. Cover lightly with a quarter inch of mix. Press down gently.
4. Water gently with the long spout so you don’t wash the seed into a corner.
5. Wait. Seedlings usually show in one to two weeks.

When they’re a couple of inches tall, thin to one plant every four to six inches. It hurts a little. Snip the extras at the soil line with scissors instead of pulling, so you don’t disturb the roots of the ones you keep. The thinnings are edible, so toss them on eggs.

Light, water, and food

Dill wants at least six hours of direct sun, and more is better. My balcony gets about seven in summer, and the dill never complains. In low light it grows leggy and flops.

Water when the top inch or two feels dry. A moisture meter takes the guesswork out, since the surface of a fabric bag dries quicker than the middle. Keep it evenly moist, not soaked. Dill in a wet bag gets root rot, and a very dry bag stresses the plant into bolting.

I don’t feed much. Dill is not a heavy eater, and too much fertilizer makes it soft and floppy. A light dose of an organic granular feed at planting is plenty. If it starts to yellow in midsummer, a half-strength liquid feed will do it.

Harvesting, and what to do about bolting

Start snipping fronds once the plant is six to eight inches tall. Take from the outside and leave the center growing. Use fresh when you can; dill loses flavor fast once dried, so freeze chopped fronds in a bit of water in an ice cube tray if you have extra.

Sooner or later it will flower, with flat yellow umbrellas. That is called bolting, and it is normal. You can let a few plants go and collect the seed for pickling, or cut flower heads off to keep fronds coming a bit longer. Either way, a fresh sowing covers the gap.

There is one more perk worth knowing. Black swallowtail caterpillars love dill, and if you see striped green-and-black ones munching, you have a butterfly nursery. I let them have a plant. I sowed extra so we could share.

What I got wrong

I once grew dill in a nine-inch pot in a hot window. It bolted in three weeks and the roots had nowhere to go. Deep bag, cool start, and sowing in succession fixed it.

Go deeper

Dill is a good first herb for a small space.
